Garlic Herb Roasted Baron of Beef

Nothing like a hot roast beef dinner when the weather gets colder. Try this fail proof recipe

  • Prep: 10 Mins
  • Cook: 1.5 Hours
  • Portions: 8-10

Ingredients You'll Need

  • 1 Meridian Free Range Baron of Beef Roast (around 5 lbs)
  • 5 Garlic Cloves, minced
  • 2 Tbsp. Olive Oil
  • 2 Tsp. Salt
  • 2 Tsp. Ground Black Pepper
  • 2 Tsp. Dried Thyme
  • Rosemary Sprigs

  1. Place the roast in a roasting pan with the fat side up. In a small bowl, mix together the garlic, olive oil, salt, pepper, and thyme. Spread the mixture over the entire roast, and let the roast sit out at room temperature, no longer than 1 hour
  2. Preheat the oven to 500F (260 C)
  3. Lay rosemary sprigs over the fat side of the roast (optional) and bake the roast for 30 minutes in the preheated oven, then reduce the temperature to 325F, and continue roasting for an additional 90 minutes OR until the internal temperature of the roast is 150F for medium rare or cooked to your liking
  4. Allow the roast to rest out of the oven on a plate (covered with foil) for 10-15 minutes before carving so the meat can retain its juices
