What is the purpose of the lemon juice in the recipe?

Meridian Meats says:

Hi Shirley,
The purpose of the lemon juice is to add a hint of citrus flavour, as well as some added moisture.
We haven’t tried this recipe without lemon juice, but if you do, please let us know 🙂
