Green Thai Curry Chicken

Curry in a hurry. Droolworthy and ready in 20 minutes.

Ingredients You'll Need

  • 1 1/2 tsp. cooking oil
  • 3 tbsp. green curry paste,
  • 2 Meridian Free Run Chicken Breasts, cut into bite sized chunks
  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/4 pound bamboo shoot
  • 2 red chilies, cut into strips
  • 1 tbsp. fish sauce
  • 1 tbsp. sugar
  • 1/4 cup basil leaves


  1. Heat a pot over medium heat and add cooking oil
  2. Saute the curry paste until fragrant
  3. Add chicken and stir to combine with curry paste
  4. Add coconut milk and water and bring to a boil
  5. Add bamboo shoots and red chilies
  6. Lower heat to simmer, cover the pot and let simmer for 10 minutes, until curry thickens
  7. Add fish sauce, sugar, and basil leaves
  8. Stir well to mix
  9. Turn off heat and serve with rice
