Beet & Goat Cheese Salad

This salad is sure to please! Crisp mixed greens, tart goat cheese, roasted beets & sweet citrus dijon dressing

Ingredients You'll Need

  • 6 ounces mixed greens
  • 1 (15 oz.) can of whole beets
  • 1 large avocado
  • 1 tsp. lemon juice
  • 1/3 cup toasted pistachios (or substitute almonds)
  • 1 can (15 oz.) mandarin oranges
  • Crumbled goat cheese
  • 1/4 cup freshly squeezed orange juice
  • 2 tsp. orange zest
  • 1 1/2 tsp. honey
  • 1/2 tsp. dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. onion powder
  • 1/3 cup vegetable oil
  • 1/2 tbsp. poppyseeds


  1. Place lettuce in a large bowl
  2. Remove the pit and peel of avocado, chop into pieces and toss with lemon juice
  3. Add to the lettuce bowl
  4. Drain the mandarin oranges and add those to the bowl
  5. Drain and rinse beets, and allow to dry
  6. Chop up the beets and add to the salad
  7. Combine orange juice, orange zest, honey, mustard, salt, onion powder and vegetable oil in a small blender and pulse
  8. Stir in poppyseeds
  9. Toss salad with dressing
  10. Add pistachios (or almonds) and crumbled goat cheese

I served this last night and it was amazing. I roasted fresh beets in the oven to use. (Cut off both ends of small sized beets, salt and pepper and wrapped in foil. Baked for 1 hour at 400 degrees. Unwrap and let cool a bit then rinse under water and slide skin off.)
My whole dinner consisted of recipes from Meridian Meats…Thank you .
