Instructions: Mix together 2 eggs and 2 cups of milk or buttermilk. Combine the wet ingredients with entire package of pancake mix. Cook on medium heat in a nonstick pan with butter or oil for 2-3 minutes on each side until golden brown and cooked through. To make a vegan option, substitute milk for a nut milk and eggs for flax eggs or egg alternatives.
