Anyone recognize this little piece of Meridian history? This butcher block is from the very first original Meridian Meats and Seafood in Poco.

This butcher block was actually used for meat cutting over 30 years ago! It is now a coveted piece of Meridian history that lives in our Tsawwassen location as a Candy table!

Citrus Season is starting! 🍊🍋 Our farm markets just received a fresh delivery of Pomelos (swipe to see them on display).

We have red, pink, gold and orange pomelos to choose from. These are the biggest of the citrus family and they’re sweet, juicy and tangy! Enjoy them fresh, on a salad or juice them.

Recipe: Stuffed Peppers 🫑
These peppers make the perfect cozy meal and they are so easy to make! Recipe makes 6 stuffed peppers.

Ingredients:

1lb Grassfed ground beef (ground turkey works as well!)
6 coloured peppers (any colour)
1 cup tomato sauce (any kind)
2 1/2 cups cheese (Monterey Jack, cheddar or a mix)
1/2 cup Parmesan
2 cups cooked rice
1/2 onion finely diced
3 cloves garlic minced
Tops of peppers chopped
1 teas cumin
1/2 teas red pepper flakes (optional)
Salt and pepper to taste

Directions:

Preheat oven to 350 degrees

Cut top off peppers and deseed them
Cook ground beef, onion, chopped pepper pieces and garlic until ground beef is cooked.

Drain any fat or pour into paper towel to absorb the fat.

Return beef mix to pan and add rice, tomato sauce and spices.

Mix well.

Add 2 cups of cheddar or Monterey cheese (reserving 1/2 a cup) and gently stir together.

Place peppers in a casserole dish and stuff peppers and then top with with remaining cheese and Parmesan.

Carefully pour 1/2 cup water into the bottom of the baking dish to prevent the peppers from sticking or burning.

Bake for 30 minutes lightly covered with tinfoil. Then remove tinfoil and bake for 15 more minutes.

You can carefully broil at the end to make the cheese extra bubbly - just be careful not to burn!
