Caprese Tenderloin Salad

This salad was created as a spin off of the traditional caprese salad! It is perfect for local tomato season and the best part is... it’s a whole meal in one delicious dish.


 Serves 2

 Prep time 20 min.

 Cook time 10 min.


  • 2 7oz Meridian Grassfed Tenderloin Steaks
  • Fresh Lettuce Mix
  • Sliced Tomatoes
  • Fresh Sliced Soft Mozzarella Cheese
  • Fresh Basil Leaves
  • Meridian Olive Oil
  • Nona Pia’s Balsamic Glaze

Butter Topping For Steaks

  • 3 Tbls Soft Butter
  • 2 Tbls Fresh Parsley Chopped
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Ground Thyme (Optional)
  • Salt & Pepper to Taste

Caprese tenderloin salad garnished with balsamic vinaigrette and meridian olive oil.


  1. Cook your tenderloin steak and top with butter topping while still hot (softened butter, garlic powder, thyme, fresh parsley, salt & pepper) set your steaks aside while you make the salad.
  2. Place several large handfuls of lettuce mix in your bowl.
  3. Add fresh sliced tomato, mozzarella and basil leaves.
  4. Slice your cooked tenderloin steak and add to your salad.
  5. Drizzle the entire dish with Meridian olive oil and Nona Pia’s balsamic glaze. Enjoy!
