Million Dollar Meatloaf

Ingredients You'll Need

  • 2 lbs. Meridian Free Range Ground Beef
  • 2 whole eggs
  • 3 scallions, chopped
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • Handful of raw spinach
  • 4 ounces goat cheese
  • 2 Tbsp. tomato paste
  • 2 tsp. cayenne pepper
  • 1 tsp. oregano
  • 2 tsp. salt
  • 1 rosemary sprig


  1. Preheat oven to 425 degrees F
  2. Mix eggs and beef in a mixing bowl, then add scallions, garlic and onions and mix well
  3. Add cayenne, oregano and salt and mix well
  4. Lay some plastic wrap on the counter and then roll the meat on top of it
  5. Flatten it out and create a rectangle and then add spinach and goat cheese to the middle
  6. Using one side of the plastic wrap, flap one side into the middle, then do the same to the other side so it creates a roll
  7. Top the meatloaf with tomato paste and sprinkle with rosemary
  8. Cook for 50-60 minutes until internal temperature reaches 160F
  9. Cut into slices
