Porcini & Rosemary Lamb Chops

Greek lamb chops

Ingredients You'll Need

  • 8 Meridian Free Range Lamb Loin Chops
  • 3 Tbsp. Olive Oil, divided
  • 1 Large Garlic Clove, minced
  • 1/4 Cup Dried Porcini Mushrooms, finely chopped
  • 1 Tbsp. Rosemary Leaves, finely chopped
  • Sea Salt & Fresh Ground Pepper, to taste


  1. Combine 2 tablespoons oil and garlic in a bowl and smear over both sides of the lamb chops
  2. Sprinkle with salt and black pepper and refrigerate for 1-2 hours
  3. Combine mushrooms and rosemary in a small bowl
  4. Remove lamb from refrigerator and coat both sides of lamb chops with mushrooms
  5. Let sit at room temperature for 30 minutes
  6. Preheat oven to 375 F
  7. Heat 1 tablespoon oil in a large skillet and add lamb chops without overcrowding
  8. Cook until brown on both sides, turning once, 3-4 minutes per side
  9. Transfer skillet to oven and bake until cooked to desired doneness (10-15 minutes for medium-rare)
  10. Remove from oven, tent with foil and let rest for 15 minutes before serving
