Spicy Prawns In Coconut Curry

Prawn curry

Ingredients You'll Need

  • 1 1/2 lb. prawns, peeled & deveined
  • 1/4 cup oil
  • 1 cup onion, chopped
  • 1 tbsp. garlic, minced
  • 2 tbsp. ginger, minced
  • 2 tbsp. ground coriander
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. turmeric
  • 1 cup canned tomatoes, drained
  • 2 1/2 cup coconut milk, unsweetened
  • 1/2 cup water
  • 1 tsp. salt
  • 3/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

  1. Heat oil in a large skillet over medium-high heat
  2. Add onions and cook, stirring occasionally for 3 minutes
  3. Add garlic and ginger and cook for 2 minutes
  4. Add coriander, cumin, cinnamon, cayenne, and tumeric and cook for 1 minute
  5. Add tomatoes and cook for 1 minute
  6. Add coconut milk, water and salt and bring to a simmer
  7. Cook for 5-10 minutes or until the sauce has thickened
  8. Add shrimp and simmer, stirring occasionally, for 5 minutes
  9. Stir in cilantro
  10. Serve with lime wedges
