Ingredients You'll Need

  • 4 lb. cleaned mussels
  • 1 tbsp. olive oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 sprigs fresh thyme
  • pinch of red pepper flakes
  • 1 cup dry white wine
  • 1/2 cup low sodium chicken broth
  • 1/2 cup flat leaf parsley, roughly chopped
  • Crusty bread, for serving


  1. Heat oil in a large pot
  2. Add the onion, garlic, thyme and red pepper flakes for 3 minutes
  3. Add the mussels and toss to coat
  4. Add the wine and chicken broth and simmer, covered, for 3 minutes
  5. Toss with parsley and cook, covered until the mussels open
  6. Serve with crusty bread
