As the Covid Crisis continues we are committed to keeping our markets as clean and safe as possible for all of our staff and customers. Here is an update on how we are doing this!
💚Plexiglass shields at all checkouts
💚No reusable bags - our plastic bags are no charge at this time
💚Please try to only touch the items you are purchasing
💚It is preferred that you shop alone (it helps keep extra bodies out of the store)
💚Seniors and compromised immune system hour is the first hour of business Monday - Friday
💚Please pay with card or tap if possible
💚Carts and baskets are being sanitized in between use
💚Gloves and sanitizer available when you arrive at our markets
💚We have full time cleaning staff sanitizing in our stores from open to close
💚6’ markers inside and outside the stores to help with social distancing - we appreciate everyone’s cooperation in keeping each other safe
💚Limited number of customers are allowed in the store at a time
💚Staff are also following social distancing so we have slightly reduced the number of staff on shift for their continued safety
💚We are looking after our staff - they are receiving “gratitude pay” an additional $2 hour during the Covid crisis period
💚If staff need time off because they are not well or are under quarantine they will continue to receive pay

Hearty Chicken Soup
8 cups chicken bone broth or chicken stock
3 Meridian Free Run Chicken Breast cooked and chopped
1-2 Tbls olivie oil
3-4 carrots chopped
3 celery sticks chopped
1 onion chopped
4 cloves garlic minced
1 Tbls ginger grated
1 teas turmeric powder (or 1 Tbls grated fresh turmeric
1 Tbls chopped thyme leaves (not stems)
1 1/2 cups small pasta (macaroni or shell)
Chicken bouillon (if using bone broth you made want to add some bouillon for flavour, it’s an individual preference)
Salt and pepper to taste
1. Preheat olive oil over medium heat and sauté carrot, celery, onion and garlic 3-4 minutes.
2. Add ginger, thyme and turmeric and stir till mixed in and fragrant (about 1 minute)
3. Bring bone broth or chicken stock to boil. If you are just using bone broth you may want to add some bouillon to the bone broth for added flavour. Be sure to taste as you add bouillon.
4. Add veggies and let gently boil for 5 minutes.
5. Add chicken and pasta and cook til pasta is done. Don’t overcook the pasta....
Today’s recipe will be using a bone broth base so here is our bone broth recipe ⬇️

You can really adjust this recipe to your liking adding or taking away ingredients and adjusting to your taste!
➡️ 12 cups of water
➡️ 2 Tbls apple cider vinegar
➡️ 4cloves garlic
➡️ whole onion quartered
➡️ 3 carrots
➡️ 4 celery
➡️ one bunch fresh thyme
➡️ 1 teas salt
➡️ 1-2 teas peppercorns
➡️ 1 turkey or chicken carcass
Bring water to a boil and add all ingredients. Boil for 4-8 hours. Can also be done in the instant pot on high pressure for 2 hours! The longer you boil it the better the bone broth!...
No rice no problem!! Cauliflower fried rice is just as delicious! Try our recipe below. Top it off with some cooked chicken or prawns and you have dinner!👩🍳 swipe for video instruction
Cauliflower Fried Rice (serves 4)
1 head of cauliflower grated
2 Tbls sesame oil (can use olive oil)
1 can corn or 1 1/2 cup frozen corn
1 large red pepper diced
3 green onion chopped
3 large eggs beaten
3 Tbls soy sauce
1 teas garlic salt
2 Tbls fresh grated ginger can also use 2 teas powdered ginger
1) wash and dry cauliflower well then grate cauliflower with large side of a box grater (or grate with a food processor) put cauliflower on paper towel to get out extra moisture
2) heat oil over medium heat and add corn, red pepper, green onions, garlic salt and ginger
3) cook 3-4 minutes then add cauliflower and soy sauce. Cook another 3-4 minutes til cauliflower is soft. Don’t over cook or it will get mushy.
4) push cauliflower to sides of frying pan and add eggs, scramble the eggs then carefully fold in cauliflower mixture and remove from heat
5) garnish with sesame seeds, fresh green onion and cilantro
6) serve as a side dish or add cooked chicken or prawns for a meal...

While it may seem as though we have been absent on social media I can assure you that we, at Meridian have been working tirelessly to make our markets a safe and healthy environment for you to shop for your family’s needs. We have been navigating an ever changing situation and implementing safety measures for both our staff and customers. We thank you for your patience, kindness and support in this situation, we have been overwhelmed by the kindness and love that we have felt from our communities. Everyone has truly come together.
Here are some of the measures we are taking to keep everyone as safe and healthy as possible:
💚we are limiting the number of staff and customers in our stores to allow room for social distancing.
💚we are working to provide visual markers throughout our stores to help promote safe distances between people. Please be mindful of everyone’s personal space while in public spaces
💚we are asking our customers to pay with card, preferably tap
💚we are providing gloves at the door for our shoppers and ask you please try to only touch what you will be purchasing
💚we are installing plexiglass at our tils to provide a barrier between cashiers and public, you will see this at all stores in the coming days
💚we are asking you not to bring in reusable bags, our plastic bags will be free of charge
💚we are temporarily not taking any bottle deposit returns
💚we have full time cleaning staff at every store working all day keeping high traffic areas, and high touch areas clean and sanitized
💚along with the health and safety measures at store level we are financially supporting any staff member who needs time off for health reasons, for the duration of this health situation
💚we are also providing additional pay to all of our staff during this health emergency - we are so proud of the way our team has come together
💚we are committed to the health and safety of our staff and customers and will continue to implement changes as necessary and keep you informed as we do.
💚thank you again for the outpouring of support, it has not gone unnoticed and we feel honoured to continue to provide our communities with healthy food during this challenging time...
With the social distancing that we have been asked to do - more people are cooking at home! And what is better then a simple one pan meal! These fiesta chicken bowls are easy and delicious and you can make them ahead and refrigerate for later! Swipe for video!
👨🍳Fiesta Chicken Bowl🧑🍳
4 Meridian free run boneless chicken breast
3 bell peppers sliced
1 large sweet onion sliced
3 Tbls olive oil
2 Tbls taco seasoning
2 cups salsa
Salt and pepper to taste
4 cups cooked rice
1 can of corn
1 can of black beans
Preheat oven to 400
Line baking sheet with tinfoil
Spray with non stick spray
Place chicken in middle of baking sheet
Place peppers on one side
Place onion on the other side
Drizzle chicken and veggies with olive oil
Sprinkle taco seasoning on both sides of chicken
Salt & Pepper to taste on veggies
Pour approx 1/2 cup salsa on each chicken breast
Bake in oven for approx 30 minutes til internal temp reaches 170
Slice chicken and assemble rice bowls...
